Pumpkin Pesto


1 cup unsalted pumpkin seeds

10 roasted almonds or pecans

1 garlic clove minced

1/2 cup of olive oil

Salt & black  pepper to taste


  1. Roast nuts in a pan until lightly browned
  2. Transfer nuts to blender or food processor (while still hot) add olive oil and garlic
  3. Add salt and pepper to taste
